We are enjoying our summer vacation and hope you are too! We will be updating this blog when we get back!
Quick easy camp dinner
There are so many things to do to get ready for camping. Then when you get there you have to set everything up. I always make a tin foil or hobo dinner for the first night at camp. It is easy and you can toss them next to fire and go about setting up camp.
You need
aluminium foil, 2 sheets per dinner
frozen hashbrown patties
frozen vegetable
smokies
You can put what ever you like in yours. I put these things in ours because they cook quickly and I don’t like to worry about raw meat getting cooked through.
Wrap the ingredients up in the foil and they are ready for the camp fire. Remember to make these up a head of time.
Making handmade pasta
Making handmade pasta is so fun. We have made easy egg noodles many times. The hardest part for us was getting the dough thin enough. We have had some chunky noodles. lol. They still tasted great.
After watching the noodle challenge on The Amazing Race, the kids are excited to learn to make noodles by spinning the dough around.
Here is a video from youtube.com. To get you started making your own pasta.
Gathing food from the yard
We live out in the mountains where there are wild and edible plants growing all around us. Lucky, huh. In the spring we get a small patch of Morel mushrooms. This kids really enjoy going out and trying to find them. They can be hard to spot some times.
“They blend in with the pine cones.” says Eric.
We are not big fans of mushrooms, but I can’t let them go to waste. We give them to some of our friends that really enjoy eating them.
Do you have a great wild mushroom recipe to share?
Aiyana's First Brownies
Aiyana made her first batch of brownies from scratch using the recipe from the back of Nestle baking cocoa.
“These brownies were easy to make and tasted good. Before you begin mixing things together make sure you’ve added everything in” says Aiyana.
1 2/3 cups sugar
3/4 cup butter or margarine, melted
2 Tbsp. water
2 large eggs
2 tsp. vanilla
1 1/3 cups flour
3/4 cups baking cocoa
1/2 ts. baking powder
1/4 tsp. salt
3/4 cup chopped nuts (optional)
Preheat oven to 350 and grease 13×9 baking pan.
Mix sugar, butter and water in large bowl. Stir in eggs and vanilla. Mix flour, cocoa, baking powder, and salt in a different bowl. Stir into sugar mixture. Add in nuts. Spread into baking pan. Bake for 18 – 25 minutes or until toothpick stuck in center comes out clean. Enjoy!
Pasta with bacon & asparagus
We found the recipe for this dish in a Taste of Home magazine. Rain cooked this herself with a little help from me. She hates to cook bacon.
“This recipe is easy to make. Remember to be careful while cooking the bacon.” says Rain.
16oz. noodles
1lb fresh asparagus (chopped)
8 strips bacon
1 garlic clove
2 Tbsp. butter
1 Tbsp. olive oil
2/3 cup half and half cream ( we had to substitute can milk)
1/2 cup shredded mozzarella cheese
1/2 tsp. salt (optional)
1/4 cup parmigiano-reggiano cheese
1/4 cup minced parsley
Cook pasta according to directions on package. In another pan bring water to a boil and add chopped asparagus. Boil for about 3 minutes, drain, and place in ice water. Cook bacon until crisp and set aside. In same pan saute garlic in butter and oil. Stir in cream. Bring to a boil, then reduce heat and simmer until slightly thickened. Stir mozzarella into the sauce. Add in pasta, asparagus, and crumbled bacon. Sprinkle with parmigiano-raggiano cheese and parsley.
This dish tastes great. Aiyana doesn’t like asparagus and didn’t want to make this recipe. After it was done she taste tested it and loved it, even the asparagus. Bonus!
Aiyana's Fruit Salad
1 banana
1 apple
1 yogurt (Aiyana used strawberry but you could another flavor.)
Slice the banana and cut the apple into bite size pieces. Then stir in yogurt. Aiyana likes to make this herself. She will grab what ever we have on hand to make her desserts. This is quick and easy and healthier than other desserts. Use other fruits if you have them. Let the kids try out different flavor combos. You might also find that if your child isn’t a big fan of yogurt, they still like this simple dish.
I did a little shopping
I bought some much needed food after being on vacation. We will be planning our first recipe for this site. I’m not sure which one we will post first, but I’m sure it will be yummy!
The Kids Can Cook
My three kids love cooking and helping out in the kitchen. We also homeschool. This blog is a learning experience for all of us. I didn’t learn how to cook well when I was growing up. We are learning how to cook good food together. I hope that once we have this blog fully up and running that you will find it worth coming back too.
While I will be doing most of the posting for this cooking blog, the kids will be doing the cooking, taste testing, and photographing. Food and cooking is a wonderful way to learn about a variety of things. Cooking can add fun to math, history, science, and just about anything else your kids may be learning about. If you haven’t cooked with your kids before, be adventurous and give it a try.
